肉松面包

Joyce 是个不甘寂寞的婴儿。你不一定要抱,但必须在她的视线范围。一见妈咪离开,就会哭或叫,高分贝,相当刺耳。颜颜已经不止一次跟我投诉她的耳朵快要聋了。 我笑笑,三岁多的小孩,哪知道什么是聋,还不是有样学样,把我跟妹妹的对话学起来。

有天下午,Joyce午睡,我下楼做事情。做到一半,听到颜颜说妹妹哭了。我还想叫她上去帮我看看,她已经边走上楼,边说她要去看妹妹。待我做好事情开房门时,看到Joyce 翻过身,正在听颜颜跟她讲故事。那个画面很温馨。我觉得心暖暖的,过去香香她,赞许她很乖。

有孩子的乐,是要当事人才能体会的吧!



面包体的食谱是取之[孟老师的100道面包]里的洋葱玉米面包,内馅改成肉松。

材料:
1) 高筋面粉 - 200g
2) 特幼粉( superfine flour) - 20g
3) 细白糖 - 15g
4) 盐 - 1/2 tsp
5) 即溶干酵母 - 1/2 tsp
6) 马铃薯泥 - 20g
7) 蛋白 - 20g
8) 水 - 100g
9) 奶油- 15g

10) 内馅 - 美奈兹和肉松适量

做法:
1) 把材料(1) 到(8)的材料全部混合,揉成光滑的面团。
2) 加入奶油,把面团揉到可以拉出薄膜就可以了。
3) 面团放入容器,盖上保鲜膜,进行基本发酵。
4) 发酵好的面团分割成6个等份,滚圆后盖上保鲜膜,松弛约15-20分钟。
5) 把面团擀成椭圆形,长度约15-18公分,翻面后,从窄处往内卷,整成橄榄球状,收口朝下放入烤盘,进行最后发酵。
6) 面团表面刷蛋液,放入预热至170C的烤箱内。烤18分钟就可了。
7) 面包待凉后,从中间割一刀,涂上一层美奈兹在刀口和面包的表面。
8) 把涂上美奈兹的面包,放在装着肉松的盘子,左右轻轻按几下,让面包均匀的粘上肉松就可以了。

我做的面包比起市面上买的较小一些,喜欢大一点的可以把揉好的面团分成5个等份。

  2. JO, i think our kids are bleesed as they are fully taking good care of by moms. It's not easy task and really need a lot of effort. Well, hope we can share more mom's bible in future.

    Tkz for dropping by. b4 i forget, u can actually replace the superfine flour with cake flour. The original recipe calls low gluten flour. Hope u like it.

    Tkz God Yan Yan is quite 乖 and that ease my life to take care of 2 kids by my own. But she does 'mogok' ( did i spell it correct?) sometimes, haha...kids right, what to do.
